Pretty Pickings.
These beauties are courgette flowers and yes, they’re edible.
They can be eaten fresh but are also commonly stuffed with something delicious and fried. They’re not packed full of nutrients (you’d have to eat a fair amount to get some of the vitamin and mineral benefits) but they don’t half look pretty when served.
If you manage to find some at your local farmers market then put them straight in the fridge when you get home and aim to sue them within two days as they don’t keep for long.
I experimented with a healthier, dairy-free take on the typical ricotta stuffed deep-fried courgette flower recipe.
