Herby Lamb Skewers with Sweet Potato, Cabbage & Cauliflower.
I know, I know…it’s Veganuary. I’m not intentionally going against it I’m just powering up on nutrients after a bout of the Omni which saw me solo for Christmas and NY (sad face).
I don’t often eat red meat but when I do I make sure it’s of great quality, like the stuff I purchased here from Provenance, and I don’t go overboard on my portion size. As the authors of The Fertility Diet say, '“Let red meat be a treat instead of your daily fare.” See my earlier post on why packing your plate with more plant protein than animal protein might be beneficial for fertility.
This recipe is great for a super quick dinner as it uses pre-prepared mint marinade lamb skewers (marinated overnight) and leftover roast cauliflower. The sweet potato is julienned and sautéed with the pointed cabbage while the skewers roast in only 15mins in the oven. It’s like a wintery take on the staple bbq weather (if only!) lamb skewers and salad.
I made some quick-pickle red onions to add a tangy flavour to the dish and a good dollop of hummus. You could also add a sprinkle of pomegranate seeds to make your dish look fancy while packing a fertility punch!
Remember the whole ‘eat a rainbow’ thing? This plate has you pretty well covered for one meal with its variety of veg.
